Fleur de Sel from Mani: It is considered to be the best salt. It is really the “flower” of salt, carefully collected from the top of the salt before it is submerged and incorporated with the rest salt of the salt pit. It is hand-picked by excellent experienced and trained craftsmen who possess special know-how. Product without processing or washing and without addition of other substances. It consists mainly of white, light, thin and friable crystals of sodium chloride, but of course also of other inorganic salts and elements such as fluorine, magnesium, potassium, calcium. It is created on the surface of the water in the salt pits and has the form of foam.
This salt retains a moisture content because it has not been processed. This distinctive texture gives its particular crystal form, its gentle taste, but also helps to retain its characteristic substances.
